Even though this very simple stew is flavored with more the traditionally Indian flavors of curry and cardamom the overall effect is very similar to the flavors found in East African cuisine.
2 lbs stew meat cut into small pieces
3 large potatoes - diced
1 medium onion - diced finely
3 cloves garlic - diced finely
1 can of low sodium diced tomatoes
1 can of green chilies
32 oz sodium free beef broth
3 tbsp low sodium soy sauce
2 tbsp curry powder
1 tsp cardamom
1/2 tsp cumin
1/4 tsp paprika
Put all the ingredients in a crock pot and cook on low for 8 hours or high for 5 hours. (You may add additional spices to your taste.) Serve over rice or with Naan.
