Easy Peasy Pizza dough

 Easy Peasy Pizza Dough - no-knead make ahead recipe


2 cups flour (all purpose for a more chewy crust or bread flour for a crunchier crust)
2 tbsp olive oil + a bit more
2 1/4 tsp instant yeast (or 1 packet)
3/4 tsp salt
1 tbsp honey
3/4 cup warm water

Garlic powder and dried basil can also be added at 1/4 - 1/2 tsp each if you want, and you can substitute 1.5 tsp of sugar for the honey if want. However, I think honey gives a better flavor, and if you buy local honey, you're supporting local apiaries and local ecosystems. 

Put the flour in a large mixing bowl. At 1/4 circumference intervals along the side of the bowl place your yeast, sugar, salt, and oil. (Don't let the dry salt touch the dry yeast!) If you're adding garlic powder or basil add them to the center. 

Add your warm water to the bowl and mix well with a wooden spoon. The dough should be sticky but not too wet. If needed add a little more flour.

Once the dough is thoroughly mixed cover the bowl tightly with foil or cling film and place it in the fridge. Leave overnight or at least 6-8 hours. It will prove slowly, and you'll get a more robust flavor and stretch without kneading. (I got this idea from SortedFood on YouTube and it's FANTASTIC.  So are they... (If you want to go a shorter route... Once you've mixed your dough, form it into a ball. Oil your bowl lightly and place the ball back in. Let prove until doubled in size or 45 minutes whichever comes first.  Then knead gently until the dough is smooth and stretchy (about 5-7 good kneads).

If you've left the dough overnight you should have a nice stretchy ball that doesn't need kneading.

Preheat your oven to 425℉. Sprinkle corn meal on a non-stick pizza pan (baking paper lined pizza pan). Roll your dough to the correct size, and place on the pan. Pinch the edges up to form a rim. Prick the flat part of the crust to prevent it from bubbling up in the oven. Brush with additional olive oil. Add desired toppings and bake until the crust is lightly browned and the toppings are done.
